I am looking to retrieve the values of the two potentiometers in a SuperCollider patch and also to remove their default action, which is to change the global volume of the Raspberry Pi. Are there any resources on this topic?

The stereo potentiometers are in the audio signal circuit and are and not accessible in software. You can instead add your own potentiometers like described here: Example Projects - Pisound Documentation.
